3 eggs, beat for five minutes, slowly beat in 1 cup of sugar. Add 2/3 cup of pumpkin.

Dry ingredients added to pumpkin mixture:

3/4 cup of flour

1 teaspoon baking powder

2 teaspoons of cinnamon

1 teaspoon of cloves

1/2 teaspoon salt

1 teaspoon ginger

1/2 teaspoon nutmeg

1 teaspoon lemon juice

Add to pumpkin mixture

Pour into greased and floured cookie sheet. Bake at 375-degrees for 10 to 12 minutes. Take out of oven and turn upside down on a clean dish towel with powdered sugar. Roll it up and chill.

Filling:

2 (3 oz.) three-ounce packages of cream cheese

1/4 cup of butter

1 cup powdered sugar

Beat until creamy. Unroll chilled pumpkin roll and spread on filling. Then roll back up and store in refrigerator.
